Gourmet Restaurant After many years in the kitchens of Monaco, David Castoldi has taken a step up by taking over Le Perroquet, in the center of Gap. It's a market-style restaurant offering friendly, bistronomic cuisine, with ideas on the slate changing with the seasons, alternating between noble and familiar products, French and Mediterranean cuisine. We'll go for the mimosa-style white and green asparagus, mustard and cured pork mignon from Champsaur, squid ink risotto, lacquered octopus and chorizo, guinea fowl supreme, fregola sarda, yellow wine and morels, strawberry/kiwi pavlova and passion fruit confit. Short cellar with a few references (Cuilleron, Denizot, Revelette, clos de l'Ours).
