Gourmet Restaurant Now run by Fabien and Ana Rimasson, this restaurant still has a good reputation in the center of Gap, and offers a high standard of market cuisine. The dishes are contemporary, combining graphic design and fashionable products, while retaining a local spirit, and serve a well-calibrated €31 menu. The chef's execution is superb, as in the case of semi-cooked salmon rolls with three sesame seeds and creamy celery, unilaterally cooked trout, seaweed, fregola sarda, confit tomatoes and white wine velouté, braised beef chuck, crispy potatoes, raisins, pistachios and orange-glazed carrot, or pear in two textures, poached with ginger and raw marinated with lime. Friendly service.
