Gault&Millau's review 2026

Fabien and Ana Rimasson run a fine restaurant in the center of Gap. The small vaulted room is cosy, and serves market cuisine in the right style: crispy tartlet and mushrooms in two textures, fried egg yolk, smoked bacon chips and full-bodied meat jus, snacked trout fillet, fregola sarda, roasted squash, leek oil, melting arancini, piquillo coulis, a long confit of pork chuck, jus reduced with amber beer, a dessert based around Corsican clementine, Breton shortbread with citrus and bergamot gel. Menu €39.
