It's Biarritz's new table en vue, a country inn on the outskirts of town, on the road to Arbonne. There, a large gate and a Basque house surrounded by a country garden, which for a long time belonged to André Gaüzère, and through the window in the distance, the Pyrenees. It's a return to basics for Sébastien Sanjou, who has recreated here his vision of the table d'amis, a convivial place where you can rediscover the flavors of yesteryear, classics to share, executed by chef Kévin Bigot. Géraldine André and Ludivine Bigot are in charge of management and service in the colorful fifties-style dining room. You'll find fresh foie gras pot-au-feu from Robert Dupérier, quail ortolan from Pierre Duplantier served in a casserole, with seasonal vegetables and a caramel crème renversée, just like at home. Well-educated and eclectic cellar (Château de Carles, Léoville-Poyferré, Fanny Sabre, Trapet, Lapierre, Clos Vougeot...).
