Chef's Restaurant From the outside, the address appears to be just another neighborhood eatery. However, Idir Fseil has taken the genre to a whole new level, demonstrating a remarkable sense of gourmandise and balance. Proof that simplicity is not synonymous with ease, the chef's bistro dishes display unexpected intensity, achieved by the finesse of the blends, the precision of the juices and the cooking. Examples include pork belly with oyster mushrooms and Jerusalem artichokes, onions and peanut yoghurt: melting, slightly smoky, full-bodied, with an unforgettable jus; mackerel burnt with leeks, with an astonishing bread, chanterelle and cocoa siphon; and the highly original dessert of sweet potatoes, hazelnut dacquoise and miso-buckwheat ice cream, perfectly coherent. Room service is as convincing in its explanations as it is in its wine advice, provided by Valentin. The cellar is short, but hard-working (Etchandy family, Plan B, Hervé Villemade, Stéphane and Jérôme Bernatas, domaine Ponson). Warm atmosphere.
