Borja Susilla, best known for his restaurant in the southern Spanish province of Alicante, and David Gonzalez (formerly of Epoq in Biarritz) now bring this mecca of Basque cuisine to life. The former for his Mediterranean notes and rice cooking, the latter for his braised specialties. The result is a spontaneous, gourmet cuisine of the moment, with rather simple accompaniments, such as gravlax, monkfish tail and confit potatoes, and the pleasant dessert tocino de cielo miso chantilly and combawa. The setting is pleasant, the service unpretentious and friendly. The Franco-Spanish cellar was created with the help of a local wine merchant, and a small selection of glasses is announced at the table.
