The house exudes wisdom, perfectly mastered service and flawless cuisine, to rediscover the Basque coast and a well-served savoir-faire. Start with a corn pancake with black pudding, and continue with an elegant hake in a chorizo crust and celery purée, or a blanquette of sot-l'y-laisse de dinde. For dessert, pear and almond clafoutis, or chocolate coulant with caramel and salted butter sauce.
