A sure bet on the racecourse side, embodied by chef Yenofa Arangoits, winner of the Tradition d'aujourd'hui trophy in 2022. The house exudes wisdom, perfectly mastered service and flawless cuisine, to rediscover the Basque coast and a well-served savoir-faire. Start with a corn pancake with black pudding, and continue with an elegant hake in a chorizo crust and celery purée, or a blanquette of sot-l'y-laisse de dinde. For dessert, pear and almond clafoutis, or chocolate coulant with caramel and salted butter sauce.
