Chef's Restaurant It doesn't take long to see the appeal of Brindos, with its large, lakeside house, its historic past and its perfect setting for local ceremonies. It's also easy to see that catering is a business that needs to be kept alive, with a cuisine that must satisfy everyone. Hugo de la Barrière, the chef entrusted with this delicate task, carries it out with care and expertise: fine work on a classic and prestigious background, with noble ingredients and seasonal vegetables. After the palette of appetizers, the Arctic char confit in beeswax, polychrome of radish with chestnut honey, the impeccable roast st. Pierre with green anise, white asparagus, light broth with bigaradier water, a good chocolate dessert with Madagascar grand cru from Cazenove. A few small and forgettable errors of service, a cellar well centered on the region and which doesn't forget to cross over to the other side of the Pyrenees.
