Chef's Restaurant In this hushed atmosphere, regulars let themselves be guided by the works of Clovis Khouri, master of ceremonies with his hidden proposals at €85 and €105. Those of us who like to be able to choose also appreciate the Marché menu at lunchtime, which lets us know where we're going: confit and hay-smoked Lake Geneva Arctic char, braised Aubrac beef cheek, pumpkin mousseline, carrot and beet, apple and quince confit, Lagavulin cream and granny sorbet, well served, in an attractive formula at €45. Cellar always vast and interesting.
