Remarkable Restaurant Benoît Vidal's descent from the mountains of Val d'Isère has meant that he hasn't really lost any altitude, while retaining all his advantages: excellent technique, irreproachable products and Haute-Savoie prices, at €175 and €195, plus a vegetal at €165, which are easy for the people of Annéci to understand. We're happy to join him for a stroll through this elegant dining room, with its slightly solemn, classic ambience. The escargots start well, with corn and bacon from the Aosta Valley, not surprising, but well worked, followed by lightly smoked trout, beet and hibiscus perfume to follow the fashion. The Arctic char is remarkable, well-balanced, with celery and cider vinegar, each ingredient playing its part, and the mallard works well, with its cocoa sauce and praline cookie. Cozy desserts, the evocation of pain au chocolat, the citrus dessert powdered with black lemon. A well-stocked regional cellar, with solid references all over the place and some fine verticals, served by a dedicated sommelier who announces the possible glasses.
