Chef's Restaurant In just a few months, Choral has become one of Annecy's must-visit addresses. Located in the Rue des Romains, a little way from the flow of tourists, it is a favorite with Annecy locals in search of authenticity. With its neo-bistro atmosphere and Nordic-inspired blond wood furnishings, it's an opportunity to meet Alban Chanteloup and Aymeric Velluz, two inspired and talented accomplices. A rustic-chic experience based around a unique menu (a little too rigid) but not lacking in interest. On this autumnal evening, we tasted the delights of bitterness, with escarole arriving smoked in a plate of capers, anchovies and hazelnuts, magnificent endives and almond scallops, the famous iodine-bitter association imagined by Michel Guérard in the 70s, or the remarkable Barbary duck, chard confit, plum paste pan-fried with juniper, autumn fruit condiment pear kiwi verjus.... The chocolate tart, made at the minute, outshines the slightly more conventional orange and grapefruit clementine, and the second toque comes naturally. The cellar is still slim, but well oriented, and Aymeric is going to make it grow.
