Chef's Restaurant Over forty years of existence and an institutional reputation for this 17th-century half-timbered house, tucked away on a side street in the historic center. Owned by Gilles and Claudine André since 1997, the restaurant has stood the test of time, with its ideal summer terrace, elegant dining room and chef's revisited traditional cuisine. The €45 à la carte menu follows the seasons, with stuffed quail in ballotine, blackcurrant vinaigrette and onion pickles; back of st. Pierre, poutargue veil, sea urchin cream and fregola sarda; fillet of duckling, quince declension and banyuls reduction; and roasted apricots, granola, tarragon sponge cake, almond milk and sorbet.
