François Bordier's patient work pays off in beautiful, exemplary and well-presented dishes. Rediscover an egg casserole with chanterelles and Serrano chiffonade, pan-fried scallops with wild mushrooms, garlic and parsley, 5A andouillette de Troyes with chaource sauce, veal sweetbread puff pastry with morel mushrooms and Jura vin jaune, filet of Charolais with morel mushrooms, crème brûlée with Dolancourt saffron.
