This former Grand Véfour chef has been delighting the people of Troy for almost thirty years, with the same pleasure in entertaining and a taste for tradition that he is constantly improving. François Bordier's patient work pays off in beautiful, exemplary and well-presented dishes. Rediscover an egg casserole with chanterelles and Serrano chiffonade, pan-fried scallops with wild mushrooms, garlic and parsley, 5A andouillette de Troyes with chaource sauce, veal sweetbread puff pastry with morel mushrooms and Jura vin jaune, filet of Charolais with morel mushrooms, crème brûlée with Dolancourt saffron.
