Not far from Troyes, one of the finest restaurants in the area, in the guise of a house with unmistakable red facades, and a meticulous interior with a formidable contemporary spirit. Here, the chef creates a bistronomic cuisine that is as aesthetically pleasing as it is product-driven, demonstrating his savoir-faire and in-depth research into the terroir. The extensive menu offers something for everyone, from caricoles in fine tart, fresh oyster mushrooms and snails with herbs and walnut kernels, to lobster millefeuille, spicy mango chutney, flowery guacamole and lime chantilly, cod en terre et mer, elimé de bacon fumé, lymphe citronnée et beurre blanc, effilochés ronds de pommes de terre, andouillette de Troyes 5A de chez Gilbert Lemelle, fromage des Pyrénées gratiné and pommes grenailles, or ris de veau braisé aux morilles, pommes grenailles et fleur de sel.
