Regularity and fidelity to local tradition, well seen and updated by Laurent Helleu, a sure bet at the Port de la Houle. Wild fish is always at the forefront, treated with respect and seasonal vegetables, after warm oysters cooked with organic leeks from Cancale. Today's winner, Tradition, shows great mastery in showcasing his terroir, right down to the aumônière de crêpe aux pommes caramélisé glace caramel beurre salé, while Denise, his wife, enlivens the dining room with precision and kindness. Well-proportioned cellar, with good Loire wines.
