The principles of the Roellinger house are evident in the bistro, which takes advantage of both the setting and the conviviality to exist in a different way. It's a wonderful seafood house, delivering true, irreplaceable pleasures, such as warm oysters, white asparagus and lovage, solette and jus pincé, diver's abalone and seaweed, grilled langoustines and herb butter, sweetbreads with yellow wine and morels, and the must-try profiteroles.
