For nearly thirty years (the couple bought the restaurant in 1997, after it had been closed for two years), the former student of Alain Passard, Jacques Thorel, Patrick Jeffroy (who was based in Morlaix at the time), Régis Mahé in Vannes and Jacques Maximin (with whom he worked for two years), has been working at the Troquet de Cancale.Régis Mahé in Vannes or Jacques Maximin (with whom he opened Le Théâtre, in Nice, in 1988) runs this restaurant, which is a troquet in name only, with his wife Denise, a seasoned sommelier and expert room manager.
The former student of the Lycée Hôtelier de Saint-Méen-le-Grand, son and grandson of hotel-restaurateurs, has succeeded in setting himself apart from the armada of crêperies and brasseries that crowd the Quai Gambetta. "Our credo?"Good products, sincerity and a warm welcome. In 1997, my wife Denise, a former laboratory technician, and I decided to keep the old name of this restaurant, which caught our eye as we strolled along the Port de la Houle. It had a good reputation, so continuity seemed a logical choice when we bought the business. And so much the worse if the name doesn't quite match what we offer on the plate" .
