Chef's Restaurant Right in the heart of the city, at the foot of the Garibaldi metro station, this Suprême, with its tranquil ambience, is more reminiscent of a country restaurant, with its exposed stonework and rough-hewn wooden tables. The cuisine is refined, well-mastered and elegant. The €55 menu offers a wide range of flavors, with a fine selection of scallops, and one of the house specialties: a gâteau de foies blonds (a cake of blond liver) with a cream of mushroom and coffee. Some fine classics, such as Arctic char (a little overcooked) with yellow wine sauce, spinach Jerusalem artichokes and walnuts and, for dessert, a very refreshing pear jelly with red wine, chestnut cream, grapefruit and yuzu. The wine list is simple, but quite appealing. Attentive service, a bit of a wait between courses, even in low-traffic periods.
