A starter of cockles, clams and bouchot mussels, petit épeautre du Velay, butternut, marinière sauce, ginger and turmeric, a medallion of monkfish tail roasted in butter, celeriac and braised cabbage heads, hazelnut oil purée and veal jus, a filet of duckling cooked rosé, pan-fried wild mushrooms, quince, parsnips and quince vinegar jus, or a 70% chocolate and coffee cream entremet, whipped Bresse cream with porcini powder, gaude tuile and cocoa grué.
