Chef's Restaurant When you first come upon this former textile factory overlooking the Orbiel River, flanked by a huge brick chimney, you're immediately taken aback, and the desire to discover this Puits du Trésor is all the stronger. Jean-Marc Boyer, who trained with Bernard Pacaud and Jacques Manière, has been working in this astonishing place since 2002, patiently renovating it and adding a bistro a few years later. Operating for some years on the principle of a hidden menu, his cuisine no longer manages to make it as far as the three toques, suffering from a lack of modernity and, at times, gourmandise, while remaining technically irreproachable: creamy wheat salad with wakame seaweed, tuna tartare, cockles, redcurrants and mirin-matured oil, mackerel fillet with beurre blanc, chard and citron confit with chest-roasted pigeon au sang, pan-fried chanterelles and Paimpol cocos before a chocolate crunch, verbena ice cream and grapes.
