The brasserie run by Franck Putelat and his teams, who are very sharp and efficient on the spot, is the best business of its kind in Carcassonne. A cuisine of character, both generalist and rooted, modern in its execution: jols à grignoter sauce tartare, moules de bouchot poireau curry sabayon vin jaune, cabillaud nacré poireau poutargue, macreuse braisée pomme purée, magret au sautoir gastrique pommes Anna... A choice of fair prices and good standards (an excellent cassoulet), combined with connoisseur keels (Sénat, Ollieux Romanis, domaine des Schistes...).
