Gault&Millau's review 2026

Fifteen minutes from Carcassonne, this charming village is home to a 3* hotel of a high standard, with swimming pool and modern comforts, as well as Julien Montagne's cuisine, between the Montagne Noire and the Mediterranean. Taken over by Kristèle Grosrenaud, the house is a good base in the area, where you can enjoy a market menu at €42, with escargot tartlet and sweet onion compote, black pork bacon and maître d'hôtel emulsion, low-temperature monkfish medallion, basil pistou and azuki beans, a duo of wagyu sirloin tartare and yuzu prawns, oven-roasted potato emulsion, a crisp chocolate cookie, milk chocolate cream and summer truffle. A warm welcome.
