Opened in 2013, Jules Niang's table is just like him, a bridge between cultures, from the banks of the Senegal River to the banks of Lyon, via his experiences all around the Mediterranean. The chef's taste for travel and his well-applied ideas demonstrate a deep reflection on terroirs and cultures, with well-calibrated menus ranging from €29 to €52. These include pumpkin velvet revisited with bissap, sakura cress and puffed black rice; monkfish cheek and fonio with peanut butter, clam froth, preserved lemon and samphire; lamb stew with spice-scented jus, vegetable brunoise, almond condiment and bissap leaves; persimmon millefeuille, vanilla crème diplomate, buckwheat ice cream and tamarind coulis.
