Like a secret lookout between sea and sky, the Patio at the La Pérouse hotel pays tribute to artists and craftsmen's skills with a bold facelift: enamelled lava tables designed à la Cocteau, lamps in the shape of corals, a bar dressed in shells, a second bar in sculpted sandstone, a fresco by Nicolas Balzicevic.... Another artist is in the kitchen, chef Damien Andrews, who has spent 17 years learning from his mentor, chef Patrick Raingeard, in his Cap Estel stronghold. The result is a luminous, well-placed cuisine with Mediterranean accents. A cuisine of simplicity with nothing simplistic about it: zucchini flowers with ricotta and a frothy emulsion with Sospel saffron, crisp green asparagus with lemon foam, delicate sea food with red mullet just cooked in garrigue broth, and meticulous work on potato spirals cooked with fish stock. On the other hand, the desserts lack conviction, like the "Comme un 1000 feuilles, chocolat et yuzu", where the iconic puff pastry has been replaced by three sheets of chocolate tuile enclosing two too-quickly-forgotten yuzu and milk chocolate creams. The small, sunny cellar is stocked with wines from Greece, Sicily, Corsica and Provence. Friendly service. The 3-course Promenade Menu at €37 is a bargain.
