Gault&Millau's review 2025

This former 17th-century convent, converted into a 5-star hotel by the Marriott group in June 2024, was ranked one of the world's top establishments in 2025. Tucked away at the top of a street, the establishment stretches over a hectare of greenery in Nice's pedestrianized old town. Its cascading terraces embrace the landscape, offering immense views of the Palais Lascaris and the Baie des Anges, bordered by the Grande Bleue. The Provencal style, with its red terracotta floor tiles and natural wood furnishings, blends with the purity of Festen's decor and the soothing hues of the 88 rooms. Here, well-being is king: meditation at the Studio du Mouvement, aperitifs at the Guinguette, local cuisine at the Restaurant du Couvent. The herbalist's shop and in-house bakery perpetuate the monastic soul of the place, while the thermal spa, faithful to ancient Roman tradition with its succession of pools and water rooms at different temperatures, extends the experience gently.
