Gault&Millau's review 2026

For more than 12 years, Thomas Hubert has been delighting tourists and friends in Vieux-Nice with his personal cuisine, where olives and artichokes are always in the foreground. The few starters, main courses and desserts of the moment adapt to the return of the market and the seasons, without revolution, but with precision. The squash and chestnut velouté, the braised lamb, the watercress risotto with snails in parsley and reduced meat juice, the revisited pissaladière with black and white pudding and the travel-inviting slate of the day, the royal sauerkraut or the very robust cassoulet as in Castelnaudary at €19, cooked in its own cassole make for excellent moments. A menu at €39, named after a tire brand, is a good way to start, even if the savings on a dish taken from the day's slate are not so attractive. Good small wine cellar with around thirty local and international wines, service a little in automatic mode.
