It's a timeless house in the center of Gap, where the region's bon vivants invariably gather. Mr. and Mrs. Dorche offer an exemplary bourgeois experience in both form and substance, with a decor that's a little old-fashioned but very warm, a service that's fluid and sincere, and a cuisine that's full of nobility, where fine products highlight nearly forty years of experience. Pascal Dorche revisits traditional dishes with gourmet flair: grilled scallops and leek blanc with morel mushrooms, millefeuille of Provençal asparagus and truffle mousseline, a fine version of Miéral squab with foie gras escalope, tarine d'abatis, jus réduit au genièvre and vegetables, a must-try leg of lamb from the Hautes-Alpes with herbs, spelt risotto with cumin, seasonal vegetables and jus réduit au thym, and finally an astonishing eggplant tart confit with coriander and rhubarb sorbet. A fine wine list with many great references.
