Chef's Restaurant Time stands still in Tourrettes-sur-Loup. The old medieval stones have so much to tell, and at the bend in the Grande Rue, Spelt has been discreetly welcoming a bistro clientele from all horizons for the past 5 years. The tandem of Raphaël Grima and Marion Luque-Bouvier is committed to naturalist cuisine, with a talent for highlighting simple dishes. The two three- and five-course lunch formulas, at €34 and €52, sum up this philosophy, with scallops lightly snacked on a bed of spinach, celery velouté with hazelnuts; the unmissable spelt risotto with lobster, cooked in a bisque scented with tarragon oil and served in its olive-wood bowl; the peach of the day, cooked on the skin, accompanied by its beurre blanc sprinkled with olive powder; poultry in court-bouillon with braised sucrine topped with fresh mustard seeds, a watercress cream and a discreet anchovy emulsion. We finish with the warm chocolate mousse, baked right on the plate with its cocoa sorbet, or the chef's mango tartlet. In the evening, the table becomes more imposing with a unique 8-course menu at €85, where the Kalamansi, the emblematic dessert, makes its appearance. Upstairs, the new lounge and its wall-mounted cellar highlight some inspiring nuggets. Service, on the other hand, is variable and depends on who's serving you.
