Gault&Millau's review 2025

The big, massive house on the banks of the Guisane is a benchmark for Briançonnais gourmets. Taken over ten years ago by Sharon and Jimmy Frannais, the dining room has been modernized. Cosy atmosphere, comfortable armchairs, white tablecloths and colorful walls. A tempting gastro spirit spoiled by the irregularity of the dishes. But there's nothing wrong with the delicious array of homemade breads and the plethora of appetizers. The rest of the menu is a mixed bag. Presented in a coconut shell, scallops (one glazed inside) with the advertised amber rum-coconut milk emulsion, which you can barely taste. The skrei is a little overcooked and the crispy spaetzles are not. On the other hand, the peppers infused with sesame oil and the miso broth are exemplary, as is the roast venison steak that follows, cooked pink with its jus court, accompanied by a caramelized root vegetable purée and Jerusalem artichoke chips. We finish with the amusing "cigar, cognac, tobacco smoked under the bell", with spiced ash, chewy match, milk jam and tobacco leaf-infused ice cream; it's a shame the smoke gives off a cold tobacco taste, but the whole thing has the merit of being original. The owner's smiling welcome and service are to be commended, as is the well-priced wine list, which covers the whole of France. These include Franck Villard's fine Côte-Rôtie 2011, Christophe Pichon's Viognier and Condrieu "Caresse", and a number of Piedmont border wines with a nod to Australia, where the chef is originally from.
