As discreet as it is well-known among local gourmets, Fabien Ferdinand's restaurant is a small haven of peace in the heart of the Alps. His house says nothing of the experience of this chef, who has worked with the likes of Lassausaie and Gagnaire, and who reveals himself in his menus through technique and height of vision. The compositions are elegant and sophisticated, featuring a starter of langoustine, squash and clementine, sabayon with Saint-Crépin saffron, roasted scallops and carpaccio, winter truffles, chard ribs and white wine sauce, roasted pigeon breast and leg, quince pulp tangy with larch vinegar, parsnip and foie gras, and finally a chestnut-glazed mousse, meringue with blackcurrant sorbet like a vacherin.
