Gault&Millau's review 2026

Inaki has returned to his Basque homeland, much to the delight of Luziens, but the Château remains the Château, with the spirit and manner that made the Parisian spirit of the 2000s of these "affranchis" as Gault&Millau called them, with Inaki Aizpitarte on the cover of the magazine. Today, we're enjoying twenty years of freewheeling merriment, but also of fine products and real cuisine, the kind we've always advocated. After some good amusements (barbajuans, cockles, ceviche...), the red tuna and its bear's garlic artichoke arugula pesto, the chard pil pil and pork Kintoa, the matured rib-eye agretti cebette black bean for this menu, always unique in many ways and always changing, at €95 that we don't regret, and which ends with a mandarin meringue green pepper sorbet. The cellar is very well stocked, and the Châteaubriand welcome is warm and friendly, or a little less so depending on the moment.
