Chef's Restaurant The restaurant offers a vision of bistronomic cuisine like nowhere else, combining terroir with a taste of elsewhere. This four-handed score by Tiphaine and Romain reflects their dual origins in Savoie and Béarn, complemented by a curiosity, both towards each other and towards the outside world, with an innovative dynamic. The plates illustrate these round-trips, such as a gazpacho of pods and peas, cucumber and mint tzatziki, vadouvan granola, rainbow trout one-sided, pea and samphire risotto, basil-lemon cream, veal shank confit, grilled eggplant, eggplant and zucchini caviar with Burgundy miso, yogurt and lemon thyme sauce, pine nut financier, roasted almond cream and white chocolate and chartreuse ice cream.
