Gault&Millau's review 2026

It's an understatement to say that we're very fond of them, because since the creation of their intimate and cheerful table four years ago, aided by the Gault&Millau Endowment, they've proved to be the best ambassadors of this new generation. Tiphaine the Savoyard and Romain the Béarnais always have the right ideas to liven up the place, and their menu is as expressive of their work as it is of their times: leeks and smoked eel with curry mayo, the pâté en croûte of the moment, braised beef cheek and the gratin of crozets with beaufort cheese, a real childhood dish for Tiphaine, are above all about the pleasure of sharing good taste, right down to the Basque chocolate and Espelette pepper cake with almond cream and tonka ice cream. Prices are always fair, with a €25 lunch menu and a well-constructed personal cellar (Viet in Morgon, Bouju in Auvergne, Arretxea, Blard in Savoie...).
