Located between Belleville and the Canal Saint-Martin, this chefs' bistro has established itself year after year as a solid representative of modern terroir. The cuisine is gourmet, creative and rooted in the Béarn and Savoy terroirs, with products of character and contemporary touches. The combinations are meticulous: onion tatin with reblochon sauce, capon with herbs, cocotte of beef cheek and pan-fried foie gras, pepper gnocchi and raclette cream. Sourced products are highlighted and the art of sauces, juices and reductions is fully embraced. At lunchtime, a €25 slate sets the course; in the evening, the menu expands, with value for money as attractive as ever. The cellar follows the same line, favoring artisanal wines that are fair and unpretentious.
