Gault&Millau's review 2025

This new contemporary gem, backed by businessman Michel Halimi and actor Christophe Lambert, is located across from the Cité des Climats et vins de Bourgogne in the iconic city of Beaune. Behind its modern façade, the 4-star IHG hotel features 74 bright rooms, including suites and connecting rooms, a Gemology-branded spa with a heated pool, a fitness center, and, of course, a gourmet restaurant, Monaka. At the helm, chef Marie Daujat—with her extensive experience—showcases local ingredients in creative dishes.
