The proud Basque house is a landmark in the local landscape, and a local stronghold of the Ibarboure family, rooted in the region to the delight of local gourmets. Generation after generation, Martin and David work hand in hand to bring all the vitality of a prolific terroir to this typical yet modern establishment. The menu is vast and rich, leaving the discerning guest to follow his or her own sequence, an opportunity that is much appreciated today: stuffed and glazed zucchini with kintoa ham and verbena beurre blanc, roasted langoustines in carpaccio with citrus vinaigrette and yuzu sorbet, hake in herb viennoiserie with Balea gin emulsion, risotto with basil pesto, farm squab with cocoa jus, thighs in barbajuans, blackberries, eggplant and black garlic.. The cuisine is taking on volume and personality, and the desserts are following suit (apricot soufflé with thyme ice cream), as is the liveliness in the dining room, with Marie-Claude and Camille, who bring a high level of professionalism while maintaining the family spirit.
