Gourmet Restaurant In his rue du Plô stall, in the midst of fierce competition, the chef sometimes wonders whether it's really necessary to continue doing good with fresh, seasonal produce. We obviously encourage him. His house has character, the tables well laid and tableclothed, in an unpretentious atmosphere. We were delighted with the poached skate wing, broccoli in two textures, lemon and Limoux blanquette sauce, followed by the squash, comté and chestnut velouté, and before a rather gourmet dessert, crousti-feuilles, vanilla ganache, red fruits and lemon gel. Diligent service, classic cellar and toque maintained.
