Gault&Millau's review 2026

Chef Jérôme Ryon and his brigade have been conscientiously carrying out their mission for many years: to make the public enjoy this exceptional place, to meet tourist demand by providing a service worthy of the history of the house, and to respect, as far as possible, a three-toque plate. There are fewer regional touches, and the menu is more consensual: carpaccio of bay of Seine scallops, char au naturel and carrot confit, roast duck breast with blood orange and date purée, creamy polenta with bigarade juice, tatin-style pear with caramel fleur de sel ice cream for a €94 menu.
