The table in this magnificent house overlooking the Cité has all the charms of a prestigious venue served by a respected tradition which, thanks to chef Jérôme Ryon, has always been able to evolve by adapting to the times. Celebrating 20 years as a chef this year, he imposes a reliable, stable brand through personal compositions that break free from the Languedoc landscape if necessary: obsiblue carpaccio and Daurenki caviar, scallops and chestnuts in risotto and trumpet cream of barbs in yellow wine, Dombes duckling, roast fillets and legs lacquered with espelette and quince jelly, coconut dacquoise and dark chocolate passion jelly in a beautifully held sequence at €119.
