In a splendidly preserved 15th-century monastery, typical of the Beaujolais region, we meet Catherine and Olivier Degand, who run this beautiful 3-star hotel and a traditional Lyonnais restaurant. Between the shady gardens and the pretty dining room, with its contemporary furnishings and period setting, the spaces are well thought out, hosting well-presented plates: a croustillant of escargots de l'Azergues, creamy flat parsley, a quenelle of pike with Nantua sauce, Bresse poultry with morel mushrooms and crêpes parmentières, a crunchy chocolate feuille à feuille. A cellar that lives up to expectations.
