A family-run business for three generations in the Saône valley, it's now Bernard Chemarin's turn to take up the torch, and offer a fine menu of traditional Lyonnaise dishes. The plates ensure that the heritage is passed on, with Bresse curd with fresh herbs, savory crumble and diced smoked salmon, fresh frogs in parsley sauce, the famous poularde de Bresse with morels, the chef's cracker with an apricot sorbet from the Monts du Lyonnais.
