Chef's Restaurant After transforming their Schiltigheim address into a chic bistro, Guillaume and Charlotte Scheer set up shop in the spring of 2025 in the former Ysehuet house, lined with Virginia creeper, in the heart of Strasbourg's most elegant district. The faithful have followed and today discover a dual setting: outside, a fresh, verdant terrace, chiselled with raised flower beds; inside, cosy, hushed lounges, less theatrical than the old Schiltigheim venue, even if the glass cellar and a sculptural suspension by Hervé Langlais give them a singular touch. Guillaume Scheer's classic contemporary cuisine opens with sea bass tartare, advertised as ceviche, whose acidity, softened by coconut milk, never masks the freshness of the fish. The roasted langoustines stand out for their precise cooking and find an ideal setting in a ratatouille, subtly baptized "niçoise", and a piquillo sabayon vibrant with creaminess. Blue lobster, with fennel confit and crispy stuffed barbajuan, is enhanced by a creamy, generous shellfish jus. Next comes saddle of lamb, just grilled, this time with slightly firm flesh, served with a fine, tangy semolina and a jus perfumed with Moroccan spices, bordering on excessive salt. Finally, a light dessert features strawberries in several forms - airy vanilla mousse, basil sorbet, pistachio crumble - but leaves the enthusiast wanting more, due to a lack of fruity intensity. In the dining room, the owner tactfully serves certain dishes herself, elegantly inquiring about each guest's experience. If the young waiters still fail to explain things fully or use language that is a little automatic, the welcome remains courteous and professional. The sommelier, Emmanuelle Thierset, distinguishes herself by her rare sense of the right wine: her pairings, from the rich and fresh Faugères Cistus blanc 2023 to the superb Châteauneuf-du-Pape Château Vaudieu 2021, reveal a definite talent. The rich menu seduces with its audacity, including a 2016 Riesling Grand Cru served by the glass, a welcome rarity. Greeted at the door by Guillaume Scheer himself, the guest leaves the restaurant with the feeling of having experienced a moment of high standing, buoyed by the elegance of the place and the assurance of a consistently reliable cuisine. However, there are mixed feelings among the regulars: the execution is remarkably refined and precise, particularly in the use of sauces, but the menu remains static, faithful to recipes that have already been tried and tested for several years. The house could do with a little more daring.
