Chef's Restaurant
Guillaume Besson’s restaurant continues to be one of the best in its price range, offering original and sophisticated fine dining for just €45 at lunch and €78 at dinner. The chef blends diverse influences to create a distinctive and modern signature cuisine. Last time, the intriguing dim sum featuring pork and grilled octopus, a cherry tomato salad with green tomato water whipped with tarragon butter, grilled veal sweetbreads and pointed cabbage confit with ginger served with a stew of Paimpol clams, tomatoes, and pig’s trotters; a mirabelle plum and lemongrass île flottante; matcha tea meringue; and yogurt sorbet. The wine cellar is very well-stocked (Achillée, René Muré, Domaine Humbert…).
