Chef's Restaurant Guillaume Besson's restaurant is undoubtedly one of the most affordable at this level of excellence, offering true gastronomy within the reach of small budgets. His €42 menu reveals the true technique of a chef who trained with Richard Coutanceau at Le Crocodile in Strasbourg, and which he replicates in a contemporary, intuitive plate. Discover the chawanmushi of chicken broth and mushrooms, chanterelles, eggplants and blackberries, oxalis, the pig in two ways, smoked/grilled rib and gribiche sabayon, purple artichoke stuffed with pig's head and onion confit, chorizo condiment, or the cappuccino mousse, praline/peanut heart and coffee/cardamom ice cream. Evening tasting menus at €75 and €95.
