Chef's Restaurant Ideally located on the edge of the shopping center and next to the Halle aux Houblons, this dining room appeals for its soft colors and soothing ambience. Gilles Schnoering, who gained his experience as second chef at Lembach's Cheval Blanc during the Mischler era, creates a classic cuisine based on obvious technical mastery. On the four-course €55 menu, the perfect hen egg cooked at 65°C is a gourmet delight, amplified by the potato mousseline and fresh truffle. The fresh, precision-seared hake is a perfect match for the two-textured sweet potato and the coconut milk, which adds a touch of Asian fusion. Our favorite dish? Nearly veal cooked at a low temperature of 64°C, with herb crust and red onion compote. The unbelievably tender meat is topped with a fine green crust and a pleasant taste of garlic and parsley. For dessert, the freshness of the Jonagored apple bavaroise is combined with the caramel ice cream, while the chocolate crumble, which adds pep, ensures an elegant, gourmet finish. We love the simplicity, the rightness of taste, the gentle cooking and the democratic prices of the smart menus at this address where you can go with confidence.
