Chef's Restaurant After a formative chef's experience at Strasbourg's famous Crocodile, Ludovic Kientz found the ideal place to make his mark: a discreet house set back from the main road, with Klein blue carpeting, sober white furniture and abstract paintings as the only splashes of color. It's an uncluttered place that reveals the chef's sense of detail and mastery, with eloquent compositions such as an œuf parfait 64°C, potato purée with Burgundy truffle and grated Albufera sauce, a cappuccino of blue lobster with satay, fresh broad beans and claw ravioli, a ballotine of royal quail, jambonette of confit leg, carrot declension and savory jus, a declension of pear verbena and sorbet.
