A superb hotel, offering every comfort and a luxurious spa, for a wonderful stay in the region. The restaurant excels thanks to the creations of Pierre Weller, a meticulous chef trained notably at Mischler and Westermann, who knows his repertoire so well that he can add a few personal touches: semi-cured foie gras, smoked eel with leek cannelloni, Arctic char with snow peas, celery, and kumquat—a beautiful pairing of Miéral guinea fowl and veal sweetbreads with a variety of carrots and a “fugue,” followed by a sumptuous dessert of apricot with rosemary and tea infusion. The service is top-notch, there’s a good four-course menu for €95, and the wine cellar is very well-stocked with wines from all over Alsace.
