We always enjoy returning to Victor Mercier’s counter—he’s a champion of locally sourced ingredients and ethical cuisine, always backed by the chef’s creativity and expertise. In addition to the €170 counter menu, diners can also opt for the €110 “Conscious Omnivore” menu, which features five substantial courses: a starter of peas and ajo blanco, cherries and elderflower, followed by Breton lobster with tomato XO, “chomardine” sauce, and verbena; grilled Poitou pigeon with slow-caramelized shallots, fatty bacon, and a pil-pil of bay leaf and lemon thyme; and a brioche-based dessert featuring apricots, and a yeast-based condiment.
