Chef's Restaurant The window display is as discreet as ever, as if to reserve it for connoisseurs only, for those who make the effort to seek and find well. In a way, this is chef Victor Mercier's philosophy: behind the taste and pleasures of the table, he reminds us of the effort it takes on the other side to make good food, the work and research into the product, the commitment to an ethic and the requirement to always stick to it. The fiefdom is well guarded, maintaining an expression as lively as ever, importing nothing and always respecting the seasons, for a plate of the here and now. We find chanterelle and apricot in a starter with bitter almond and meadowsweet, mushroom dumpling, XO shiitake and mushroom essence, rabbit like a royal hare, sauce with olive caramel, red mullet from Saint-Jean-de-Luz, shrimp and broad beans, tagetes and orange blossom from Vallauris, a dessert of strawberries and peas, tarragon and Maceron bay from the Ile de Ré.
