The regulars are at the "comptoir d'hôtes" for the large, ten-course menu at €165, while the real insiders are at Victor Mercier's for the experience, the chief artificer of an inevitably successful sequence. The offer is extended by classic conditions for a beautiful menu, also very representative, at €95 for five courses, also expressing the philosophy of the place and the brand ("Fait ici en France" in acronym). No imports, local products but ideas from all over the place for a cuisine of fine inspiration, readily plant-based (leek with Meyer lemon hazelnut praline vinaigrette to open, and a full menu for amateurs) but not denying itself some fine proteins, diving scallops with a "café" of celery and fragrant woodruff or pigeon and caramelized turnips with heather pollen honey and Damask rose. The terroir of the dessert with walnuts and Périgord truffles for a hit, flavored with yellow wine. Cellar of good constitution, sufficiently varied to suit.
