Chef's Restaurant Maxime Bouttier's table, set in an unusual two-storey townhouse, with its brick and waxed concrete interior and rough-hewn wooden tables, is on a roll. The chef's ideas draw on his memories of the Sarthe region, such as rillette du Mans and cow's udder with capers. The 5-course, €80 "carte blanche initiation" menu served that day included Paimpol coconut, hazelnut butter and samphire, followed by blue lobster with celery remoulade and shellfish bouillabaisse, and free-range veal with chanterelles, corn and soy. Two good desserts, clafoutis reine-claude, vanilla-basil ice cream, before the chef's signature: chocolate, Madagascar vanilla ice cream. Accompanying this interesting, uncluttered, seasonal cuisine is a monstrous wine list that'll have your head spinning even before you've filled the glasses, well commented by sommelier Vincent Glaymann.
