Gault&Millau's review 2026

Pierre Sang's "on Gambey" version is a little less bistro-style, a little more developed, not to say gastro, because neither the ambience nor the style fit into the expected canons. Here, we do things right without taking the piss, without filling your head with immersive experience, and this naturalness feels good. Two menus at €48 and €58, in five or six courses, not improvised but on the contrary well laid out, even if hidden, with great bottles and wine by the glass, such as Da Ros's Chante-Coucou at €10.50 or Henri and Gilles Buisson's générique at €13.
