It's an elegant restaurant with inventive cuisine, located in the heart of the Hôtel Dieu, on the first floor of the superb building that has become the Intercontinental. Mathieu Charrois, who worked alongside Lionel Lévy in Marseille's exemplary restaurant, has a flair for chic dishes and the right pairing. His dishes are both alluring and tasteful: white fish mousseline in breadcrumbs, tetragone, Nantua sauce and crayfish, in a nod to the Lyonnaise quenelle, smoked Murgat Arctic char, chanterelle tartar with sapinette vinaigrette, salsify sweetbreads with apple pressed in cider and beurre blanc with pink berries. Pastry chef Vincent Thomassin follows the line with a fine thematic approach, focusing on chocolate, apple, peanut and soy. Well-developed cellar covering most regions, good service.
