Gourmet Restaurant After long stays abroad and a stint in Perpignan, Julien Hermida takes on a one-man show, with his wife Magalie in the dining room, in a beautiful, tastefully renovated building just a stone's throw from the town's main square. A single semi-circular table faces the open kitchen, where the chef proposes (or rather, imposes, since everything is blind) dishes inspired by the terroir but with obvious Asian influences; green asparagus is classically associated with lard colonnata, lean meats are lacquered on a marked Cantonese sauce; for dessert, strawberries are revealed with a hint of balsamic vinegar; the wine list is centered on Roussillon wines, but you can find a bottle from Lebanon; for these first impressions, a cuisine open to the world that can still be refined, in this interesting experiment.
