Gault&Millau's review 2026

This seafood restaurant has been built up over the years, not to say eons, thanks to the talent of Sophie and Mathieu Aumont who, season after season, have embellished their home to make it the most distinguished in town, and refined their offering with a seafood, vegetal and creative cuisine that makes no concessions to fashion or convenience. It's hard to remember that the Pesked were a launch pad for Jean-Marie Baudic (that was twenty years ago), but today Mathieu's cuisine is the hallmark of the house's style, with refinement and just the right flavor: scallops in beet carpaccio, abalone snacked on seaweed broth cabbage and periwinkles, a declension of prairie, all fine dishes on the delicate €90 menu, served with chic and well-being. Producers are well identified and showcased, and the cellar boasts a wealth of fine labels from all over the vineyard.
