After a formative tour of France with top chefs, Mathieu Le Tinier has returned home, working with fine produce in an updated classic spirit. The €42 menu lives up to its promise, with pumpkin velouté with Paimpol cocos and bacon, virgin pumpkin seed oil, pan-fried scallops, smoked haddock risotto and airy beurre blanc, low-temperature cooked poultry breast, butternut cream and Indian curry cream sauce, grand cru Caribbean chocolate dome glazed with cocoa and vanilla ice cream. Good cellar, with around two hundred references.
