On the Gouët estuary, opposite the old tower of Cesson, Nicolas Adam's table is a concentrate of Brittany, expressing for over twenty years a free and elevated idea of the region. This native of Normandy and Breton at heart is a lover of the coast, which he showcases in and alongside the plate: a setting full of character, rendering the colors of the country, the contrasts of the shoreline, the sea with the nuances of rock, moss and herbs; local produce beautifully displayed. Discover spider and tarragon, cauliflower tabbouleh, mayonnaise siphon and reduced spider juice, pan-fried pollack, oyster mushrooms and artichoke, crushed Jerusalem artichoke, bacon crumble and roasted bone juice, pan-fried sweetbreads, smoked potato mousseline, scorsonères, shiitakés and veal juice, a beautiful salted butter caramel soufflé, vanilla ice cream.
